And here I was thinking, that the company's name "Mahlkönig" was the most German thing in its naming. Little did I know that the E doesn't stand for "elektrisch" (electrical), but for "Einphasenstrom" XD
It is, however, perfectly in line with the German mindset of manufacturing things, I guess. It works, there's not much fuzz about being visually beautiful and they probably intentionally prioritized the option to easily replace or maintain some elements over wanting them to reliably last longer. They just expect a Cafe to eventually have to replace the hopper or the burrs, so you can order spare parts easily and replace everything with a simple screw driver.
This is a kind of neatness that people in Germany value, but it's not the Weber Workshop's "a sophisticated rich person would put this in their kitchen to show off"-neatness.
i know old video, but short ek, tall hopper complaint, i feel like its a brand silhouette thing (yes its dumb) but looking at their older models, they all have that curvy tall urn style hopper, easy to recognise etc

I recently bought the ek43s and I am super happy but I also look for a better set of burrs compared to the standard ones that comes with.

I use EK43S at home and as you said the stock hopper is definitely not built for a home setting. So I bought a single dose stainless steel hopper from AliExpress and it worked perfect for me. For a doser I use a Weber Workshop’s blind shaker. It kind of making some coffee chaffs flying here and there, but other than that it works great and always get exact amount of coffee grinds without loss. In summary, EK43S is certainly not built for a home use, but with some proper modding and careful thoughts on your workflow, it can be a great choice as EG-1, monolith or lagom P-64.
Any plans on doing a review of the Mahlkönig X54.?
My first job was at a farm shop in around 2005. They stocked 10 or 15 different coffees and at least 20 varieties of tea. I would grind the coffee to order with one of these machines which must have been 20 years old then. Nice to connect the dots now and know I was using such a prestigious machine haha.
Was in a Blue Bottle recently in LA and observed they had two big hopper on-demand Mazzer SJs or Minis, unsure, for espresso, and an EK43 with an Acaia bean doser to single dose for pour over. The espresso was good and I didn’t get the chance to try the pour over but I’ll try to try it next time I’m in there.

You show us rubbish machines that are likely built to order and aren't for mass market hence no mass market pricing. Never have I seen you reviewing Eureka Chrono which with the right burrs should outperform any thousands pound grinder
I use this everyday. I definitely disagree about texture. That might be a your technique thing. But definitely not a home cafe
The good news is, you don't need this dork's permission to use the Mahlkonig at home. I own the EK43S, and I use it to grind a 20g does 3x/day and I absolutely love the grinder. It's fast, easy, a little scary, and has extremely low retention. With a couple of knocks and a quick once-over with a small pastry brush, I get between 0 to 2 tenths of a gram retained, using the small, single-dosing mini hopper. If you want one, get one, regardless of what His Majesty tells you.

Using it in a coffee shop for espresso is a bit more convoluted than with other grinders, but I can't think of anything else I'd want to use, which is why it was the only grinder I had in my shop. The key to workflow is to have pre-weighed doses of beans, or, if you have the funds,an Acaia Orion, which will dispense preset doses of beans. The main advantage for a multi-roaster shop like I had is that you can run multiple espresso options with one grinder, which goes some way to mitigating the high cost of the EK.
On another point, James intimates in the video that the EK is rarely used for espresso; this is not entirely accurate, as I know plenty of shops, including Colonna and Smalls, that have been using the EK exclusively for espresso for many years.

Holy crap! how can such a huge expensive machine have so many failures… wierd. I would have expected everything to be perfect, the damn thing needs dialing in to keep a consistent grind lmao! my sage barrista express doesnt even need that XD. What a waste of money.
